Beet Root Salad
Enjoy with meats or more veggies! GAPS Diet approved! Pairs well with our Organ Dense Meatloaf recipe.

- 1 ½ lbs beet roots
- ½ cup walnuts raw and sprouted
- 3 cloves garlic
- 8 prunes dried, seedless
- ¼ cup mayonnaise homemade with animal fat such as tallow or duck fat or Primal Kitchen brand is acceptable
- ¼ tsp sea salt
Wash and peel beets.
Steam until fork tender.
Run through a coarse grater.
Pulse walnuts, garlic and prunes in a food processor.
Toss in with grated beets.
Then mix in mayonnaise and salt well.
