Honey Glazed Carrots
Specific Carbohydrate Diet approved!

- 1 lb carrots baby
- 2 tbsp olive oil extra virgin, organic
- 2 tbsp honey raw
- 1 tbsp lemon juice fresh
- to taste sea salt
- to taste black pepper
- 1 tbsp parsley chopped
Bring water to a boil in a medium pan.
Add the carrots and cook 5-6 minutes or until they are tender.
Drain the water, but leave the carrots and return to medium heat.
Add oil, honey, and lemon juice.
Cook for about 5 minutes or until the glaze coats thickens.
Sprinkle with salt and pepper and garnish with parsley.
