Pour warm water to cover cashews and let sit for at least an hour.
Next, drain water and put cashews along with the rest of the ingredients into a blender.
Blend on high until completely smooth, about 5 minutes.
Pour into a bowl and cover with a cloth.
Store in a warm area (a dehydrator is perfect) for 24-28 hours. The longer you leave it, the tangier it will get.
When it starts to look foamy and is coming away from the sides of the bowl, it is ready. It should have a strong but pleasant tangy smell! Stir or well or smooth it out in the blender again if desired.
Transfer to a container and store in the fridge for up to 1 week.
