Add the yolks and honey to a stand mixer. You can also use a hand mixer or a blender.
Whip up for 15-20 minutes until the eggs emulisify and the mixture becomes thick.
Eat right way or let it sit in the refrigerator to thicken further. You can even pop it in the freezer for a refreshing frozen treat.
