Recipe: Russian Custard

Russian custard, often adapted for the stage 2 of the GAPS diet, is a nourishing treat made with wholesome ingredients that support gut health. It combines raw, pastured egg yolks and raw, local honey for sweetness. It is easy to whip up and packs a nutrient dense punch, making it a satisfying option for those looking to maintain a gut-healing lifestyle.

Ingredients
  

  • 4 egg yolks raw, pastured
  • 2 tsp honey raw, local
  • pinch sea salt Redmond Real Salt or Celtic

Instructions
 

  • First separate the egg yolks from the whites.
  • Reserve the whites for another recipe.
  • Add the yolks and honey to a stand mixer. You can also use a hand mixer or a blender.
  • Whip up for 15-20 minutes until the eggs emulisify and the mixture becomes thick.
  • Eat right way or let it sit in the refrigerator to thicken further. You can even pop it in the freezer for a refreshing frozen treat.
