
Chicken Croquettes

Ingredients
- 2 cups chicken cooked, boneless
- 3 tbsp almond flour
- 1 ea egg pastured, organic
- 1 small onion diced
- 3 tbsp butter
- salt, pepper, herbs to taste
Instructions
- You can make in a food processor or just chop everything very fine.
- Mix chicken, onion, egg and herbs until well blended.
- Add half of the almond flour along with salt and pepper and mix until combined.
- Using your hands, shape into small pancakes.
- If the mixture is hard to shape, add in more almond flour a little at a time until it's easier to handle.
- Fry in butter over medium heat until golden brown on both sides.
