Chicken Croquettes

Ingredients
  

  • 2 cups chicken cooked, boneless
  • 3 tbsp almond flour
  • 1 ea egg pastured, organic
  • 1 small onion diced
  • 3 tbsp butter
  • salt, pepper, herbs to taste

Instructions
 

  • You can make in a food processor or just chop everything very fine.
  • Mix chicken, onion, egg and herbs until well blended.
  • Add half of the almond flour along with salt and pepper and mix until combined.
  • Using your hands, shape into small pancakes.
  • If the mixture is hard to shape, add in more almond flour a little at a time until it's easier to handle.
  • Fry in butter over medium heat until golden brown on both sides.
